But there's been excellent evidence for years that the type of fat matters greatly. Nutritionists say saturated fats in meats and dairy products and the trans fat in snacks and fast food are harmful, while olive oil and some types of fish, nut and vegetable oils can boost health......<BR/>But maybe the most important moral to take away from this study is that Americans need to emphasize the positive -- what they do select to eat -- rather than the negative, what they prohibit. One reason the French tend to have less cardiovascular disease is that they consume smaller portions, and far more fruits and vegetables, than Americans do, says Sonja Connor, a nutritional researcher at Oregon Health & Science University.
